1 cup granulated sugar
½ cup shortening
1 egg
1¾ cup sifted all-purpose flour
½ tsp. salt
½ tsp. baking soda
¼ cup buttermilk
¾ cup chopped pecans
1 cup chopped dates
16 oz. Sunripe Fruit Cake Mix

Directions:

Preheat oven to 400º. Cream shortening and sugar. Add egg and beat well. Reserve a little flour to toss with fruit. Combine remaining flour with salt and baking soda.

Add dry ingredients alternately with buttermilk. Toss fruits with reserved flour. Fold in floured fruits and chopped pecans. Drop by spoonfuls onto greased baking sheets about 1½ " - 2" apart. Bake 8 - 13 minutes, depending on cookie size.

Store in a tight container.

This recipe came with a container of Sunripe Fruit Cake Mix.

We used coconut oil instead of shortening, and almond flour. We substituted 1/2 cup of Stevia for 1/2 cup of the granulated sugar.
