A Big Ole Turkey

Directions:
Remove liver neck, etc. From of Turkey - rinse cavity.
Pour lots of salt and pepper into cavity
Put in roasting pan on rack(s)
Stuff onions (quarter) and celery (with leaves) into cavity
Pour Wesson oil over entire turkey. Salt and Pepper (LOTS) entire Turkey
Wrap with aluminum foil around end of turkey legs and wings - so they won't get burned / dark
Add onion and celery to bottom of of roasting pan
Preheat oven to 325º
Pour water in bottom of roasting pan (at least 1/4 to 2 inches)
Cover (like a tent) turkey with aluminum foil
Put in oven for approximately 1-1/2 hours
Cool - remove from roasting pan and place on plater
Drain all drippings for gravy. May need to use a strainer/colander to remove drippings

A frozen turkey takes about 3 days to defrost in the fridge so keep it out a little while on counter in the beginning to give yourself a jump start....
