1 cup oil
1 cup sugar
1 cup flour
2 tbsp. vanilla sugar
1 tsp baking powder
12 oz. corn starch
Lemon zest
Dulce de leche for filling and 1 cup unsweetened shredded coconut to roll the sandwich cookies in.

Beat the eggs with oil then add the rest of the dry ingredients and mix. Shape dough to small round cookies – attempt to make them the same size so it easy to match them up when filling the two cookies. The cookies shape doesn’t change much when baking. Bake at 350ºF for about 10 minutes until they barely start to color.

Fill the cookies with a tbsp. of dulce de leche and roll it in the shredded coconut.
