• 1 whole egg
• 2 cups flour
• 3 egg yolks
• Beef, Turkey, or Chicken broth
• 3T water
• 1 tsp salt

Directions:
Directions:
Beat eggs, water, & salt with fork or whisk until fluffy ( froth will form)

Add slowly approx. 2 cups flour. If stiff enough to roll without using all the flour that is fine.

Flour rolling pin and board or surface. Roll out noodles leaving a bit of thickness. After rolling place on cloth dish towels to dry. Rub liberally with more flour on both sides and flip as needed to let dry. Several hours or overnight if possible.

Roll up and cut to desired width.

Heat broth in large noodle pot to a light boil. Add additional seasonings as desired - garlic powder/ salt , giblets may be boiled and broth added as well.

Drop noodles unrolled into pot and stir continuously so as not to stick to bottom.

Broth may be thickened with leftover flour from noodles or use Wondra ( it helps prevent clumping) Slowly boil until desired doneness.

Serve over mashed potatoes.
