3 eggs
2 c. sugar
1 c. vegetable oil
1 tsp. vanilla
2 c. lightly packed coarsely grated zucchini
2 c. flour
2 tsp. baking soda
1 tsp. salt
1T. cinnamon
1/4 tsp. baking powder

Directions:
Directions:
Beat eggs slightly and add sugar, oil and vanilla. Stir in zuchinni and flour sifted with cinnamon, baking soda, salt and baking powder. Bake in a 350 degree oven for 1 hour in two greased and floured loaf pans. Cool 10 minutes and then turn out onto a rack.
