Peanut Butter Biscotti Recipe

1 c all-purpose flour
½ c whole wheat flour
½ c powdered peanut butter
1 Tbsp baking powder
Pinch of salt
1 c peanut butter (crunchy or creamy)
½ c coconut sugar
½ c splenda
3 eggs
¼ c milk
1½ tsp pure vanilla extract
½ c chopped peanuts, optional

Preheat oven to 350º F
Line baking sheet with parchment paper

In a medium bowl, whisk together both flours, powdered peanut butter, baking powder and salt
In a large bowl beat together peanut butter, sugar and splenda
Add eggs and beat until thoroughly combined
Add milk and vanilla and beat until thoroughly combined
Add the dry ingredients to the wet ingredients and mix until just combined
If using, fold in peanuts

Form 2 logs on prepared baking sheet
Bake ~25 minutes or until firm to the touch
Allow to cool on the baking sheet for 10 minutes
Transfer to a cutting board and use a serrated knife at a 45º angle to slice into ½" thick pieces
Place slices back on baking sheet with cut side down
Bake 10 minutes
Flip pieces over onto the other cut side
Bake another 10 minutes
Transfer to a wire rack and allow to cool completely
