2 1/2 c. Pillsbury All Purpose Flour
1/2 c. sugar
1 c. butter

Directions:
Directions:
Preheat oven to 375 degrees. In a large mixing bowl, combine the flour and sugar. With a pastry blender, cut in the butter until it is crumbly. With hands, shape the dough into two balls. Using two ungreased circular 9" cake pans, place a ball of dough in the middle of each one. Flatten each into a 9 inch circle until you cover the pan. Prick many lines across the entire pan with a fork. This will make the shortbread crispy. Bake in a 375 degree oven for 20-25 minutes or until lightly browned. Remove from the oven and while it is still hot, cut each pan full into 16 pie wedges. If you don't cut it when it is hot, it will crumble. Sprinkle some with powdered sugar, some with green sugar and others with red sugar. It makes 16 cookies in each pan.

This is a 60 year old recipe from our dear friend, Irene Vrazo. Mom (Sylvia) and I anxiously await the arrival of her Christmas gift each year-a tin full of shortbread. Then we "ooh" and "ahh" and savor every last bite, hiding some in the freezer from sneaky fingers!
