(1) 4 lb. chicken, boiled and deboned


Dumplins
3/4 c. chicken broth
1 Tablespoon shortening
Dash of salt
1 cup + Flour
1 egg

Directions:
Directions:
Place washed chicken, a cut up onion, some celery into a dutch oven and boil for one hour. Remove chicken and let cool, then debone and coarsely chop. Strain the vegetables from the broth, and keep simmering.

Place 1 cup flour in large mixing bowl. Add salt, shortening, 3/4 cup broth from the chicken, and egg and mix thoroughly. Add enough flour for mixture to be able to roll out on a floured board. Roll dough, cut into strips about 1" x 3" and drop into boiling broth.Cook until done (about 15-20 minutes).

Stir chicken into dumplins and heat through - 3-5 minutes.

This is roughly Grandma Louise Lacey's (Bernice's mother's) recipe, although her ingredients were usually measured by sight and hand! The chicken broth and the shortening make all the difference in the dumplins.
