1 ¾ cup all-purpose flour
1 tablespoon baking powder
¾ tsp. salt
¼ teaspoon ground cinnamon
6 large eggs
1 ¼ cups sugar
¼ cup whole milk
½ tsp.vanilla extract

Soak:
1 can evaporated milk
1 can Nestle's Table Cream (found near the other canned milks)
1 can condensed milk

Topping:
2 pints heavy whipping cream (or a tub of whipped topping)
¼ cup powdered sugar

Garnish - optional
Assorted fruit - blackberries, blueberries, strawberry, kiwi looks beautiful
Sugared almonds - toast sliced almonds in a skillet with 1 tbsp butter and 1/4 cup sugar, stir until sugar melts and almonds start to toast.
Toasted coconut - layer on a cookie sheet and put under the broiler for a couple of minutes.

Preheat the oven to 325°.

Whisk the flour, baking powder, salt and cinnamon together in a medium bowl; set aside.

Separate the eggs into yolks and whites in two separate bowls. Mix the yolks and sugar, then add to the flour mixture, stirring until just blended. Then using clean beaters, beat the eggs whites until peaks form.

Combine the milk and vanilla extract and gently fold that into the batter, mixing just to blend. Using a spatula, gently fold the egg whites into your cake batter.
Spray three 8-inch cake pans with nonstick cooking spray and divide the batter among them.

Bake until the cakes are golden brown around the edges and spring back slightly when pressed in the center, 18-20 minutes.

While the cakes are baking, make the soak.

Combine the evaporated milk, table crema and condensed milk in a measuring cup and stir to blend; set aside.

Once the cakes are done, immediately remove the cakes from cake pans and invert them onto a wire rack (if you have one—if not, separate plates will do just fine). Put a baking sheet under the wire rack to catch the mess you are about to make. Poke the cakes all over with a fork. Drizzle the milk mixture over all the cakes, letting it soak in. Let cakes cool completely. Take your time with this step!

Topping:
Using an electric mixer, whip heavy cream and powdered sugar together in a medium bowl until they're at a pretty stiff peak. Spread a thin-ish layer of whipped cream onto one cake. Place another cake on top and repeat, putting a little more on the top, using a spatula to create like peaks. Then ice the sides of the cake.

Decorate the top and or sides of the cake with fruit and toppings
Refrigerate cake for at least an hour to "set".

Make it easy on yourself and use a yellow, white or vanilla cake mix and it will be just fine.For the soak, you can substitute coconut milk or whole milk for the Nestle's table cream. Everyone likes this cake, but it's Rhom and Harlee Grace's favorite.
