1 can canned tofu pockets with liquid
1/4c sugar
3-4Tbsp soy sauce
2Tbsp sake
2c cooked rice
3 Tbsp seasoned rice wine vinegar
1Tbsp white sesame seeds
1-2Tbsp pickled ginger

Directions:
Directions:
Remove tofu pockets from can, reserving liquid. Gently pry each piece open to form pocket.
In a sauce pan, liquid from can with about equal parts water, sugar, 3Tbsp soy sauce, rice wine. Heat until sugar is melted. Simmer tofu pockets 6-7 minutes. Drain.
Sprinkle rice with seasoned vinegar & sesame seeds & toss gently with a wooden spoon while fanning it with a stiff fan or piece of cardboard. This cools the rice while avoiding moisture condensation.. Dampen hands, divide rice into 8-10 balls, fill each tofu pocket with a rice ball. Serve with thinly sliced pickled ginger.
