If a recipe calls for buttermilk and you don't have any on hand, put 2 Tbsp of lemon juice in a cup and fill with milk. In about 4 minutes you will have a cup of suitable buttermilk substitute. You can use vinegar if you don't have lemon juice, but I think lemon juice is better.
