7 to 8 medium tart apples (Granny Smith)
1 Tbs flour
⅔ to ¾ cup sugar, depending on the tartness of the apples
½ tsp cinnamon
1 Tbs butter or butter substitute
1 Tbs lemon juice

Directions:
Directions:
Prepare two pie crusts for a double crust pie. Line a 9" pie pan with one sheet of pastry.

Mix flour, sugar and cinnamon. Slide apples about ¼" thick. Arrange half of the apples over the lower crust, then sprinkle with half the flour-sugar mixture. Add remaining apples and sprinkle with remaining flour-sugar mixture.

Dot butter pieces around the top and sprinkle with lemon juice. Brush edges of lower crust with water or slightly beaten egg whites. Lay pastry crust over the top, vent for steam release. Seal the upper and lower crust together.Trim off excess dough. Bake in a HOT oven 450º for 20 minutes. Place ring on crust to protect it from burning. Reduce heat to 325º and bake 35 more minutes or until apples are well done and juices have reduced.
