Ingredients: 1 king size loaf of bread (or two bags of cubed stuffing bread) 2 eggs + enough milk to measure 1 cup 1 medium onion - chopped (more or less according to taste) 3 or 4 stalks of celery - diced (more or less according to taste) 3 tbls butter chicken or turkey broth/stock (one can) salt pepper

Directions: |
Directions:-Add butter to frying pan -When melted add celery and onions. -Add a half can of after about 5 minutes. -Add salt and pepper to taste. -Cook down until broth just about gone. -Meanwhile, add stuffing cubes to LARGE mixing bowl. Measure out eggs and milk. -When celery and onion starts to smell really good remove from frying pan and let cool for a bit. -When its cool enough not to burn you dump it on stuffing cubes, add in milk and egg. -Scrub up good and roll up those sleeves. Easiest way is to mix this literally by hand. -Start squishing it all together - until you can form easily into balls. Should be a bit sticky. If too dry add in a bit more milk, too wet, bit more bread. -Add formed stuffing balls to cookie sheet - best to spray first they do stick. -Take remaining broth and add to tops of stuffing balls - depending on size a half tsp or so. Just enough to moisten. -Bake at 350 for about 45 minutes. |

Notes: Enjoy - if you're like my family you'll eat these hot or cold, not unusual for us to go to bed with a dozen in the fridge and wake up to find them half gone from midnight munchers.
