1 lb. Dry Beans
2 qt. Water
1 Onion (chopped)
¼ lb. Salt Pork
¾ C, Molasses
1 tsp. Salt
1 tsp. Dry Mustard

Directions:
Rinse beans in cold water & drain. Place in a large sauce pan and add water, bring to a boil for 2 minutes. Remove from heat, bring to boil, cover and simmer gently over low heat for 1 hour until beans are tender. Drain beans and reserve liquid. Turn beans into a 2½ qt. bean pot. Add onion and mix lightly. Cut through salt pork every ½" making cuts 1". Bury deep into beans. Mix 2 cups of reserved bean liquid with molasses, salt and dry mustard. Poor over beans. Cover and bake at 300º for 5-6 hours. Check beans once every hour at the beginning to be sure beans are covered with liquid.
