2c flour
1c buttermilk
3/4tsp salt
1Tbsp baking powder
1/4tsp baking soda
4Tbsp crisco
1Tbsp sugar (optional)
Note: If you put 2Tbsp of lemon juice in a cup and fill it with milk, in about 4 minutes you will have 1c of acceptable buttermilk.

Preheat oven 450.
Mix dry ingredients. Cut in butter & crisco with a fork or pastry cutter. Add buttermilk & stir gently until flour is incorporated into a sticky ball. Do not overmix. Pour doughball out onto a floured surface. Sprinkle lightly with flour & fold 5 or 6 times. Do not overwork. Gently press out to about 3/4 inch thick. Cut & place just touching on a baking sheet or in a greased castiron skillet. Bake about 19 minutes, until golden. Makes about 8 or 9 biscuits.

This recipe doubles well.

I remember my grandmother making essentially these biscuits, except I don't think there was any ingredient that she measured. She started by forming a depression in a large bowl of flour. She either measured the milk with a coffee cup (for a larger batch, use a larger cup) or just poured it straight into the bowl. She tossed the salt & baking powder into the milk, then scooped the crisco out of the can with her fingers and mixed it with her hand.
