3 tablespoon butter
1 1/2 to 2 pounds stewing beef, cut into 1 1/2 inch cubes
1 onion, chopped
2 cloves garlic, crushed
2 tomatoes, peeled, seeded and chopped
1 to 2 cups beef broth
1 bay leaf
1/2 teaspoon salt
Freshly ground black pepper
1 can kidney beans, drained
3 cups cooked rice

Directions:

Heat the butter in a casserole and saute the beef cubes over high heat until nicely browned on all sides. Lower the heat, add the onions and garlic saute for 5 minutes. Add the tomatoes and cook 5 minutes more. Add 1 cup broth, salt and pepper and bring to a boil. Lower the heat, cover and simmer 1 to 2 hours until the beef is tender. If the meat becomes too dry, add a few tablespoons more of broth from time to time. The mixture should be quite thick. Stir in the beans, cover and simmer 15 minutes more. Place the rice on a heated platter and spoon the mixture on the top. Serve IMMEDIATELY.
