5-6 over ripe bananas
1 c. vegetable oil
2-1/4 c. sugar
1 tsp. vanilla
4 eggs
3 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 tsp. ground cinnamon
1/4 tsp. nutmeg
1 c. chopped pecans
1 c. raisins (optional)

Directions:

Preheat oven to 350º.

Mash bananas and pour 1/2 c. oil over them then set aside while mixing other ingredients. Cream 1/2 c. oil, sugar & vanilla. Add eggs one at a time, blending well after each addition. Stir in bananas and blend. Mix dry ingredients and add, mixing well. Stir in raisins & nuts.

Pour into 2-3 greased and floured loaf pans to 2/3 full. Bake at 350º oven for about an hour or until done. Muffins bake 15 minutes until done.
