2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup sugar
3/4 cup light brown sugar, packed
2 tsp vanilla extract
2 eggs
2 cups (12 oz) Ghiradelli chocolate chips (I use 1/2 semi-sweet and 1/2 milk chocolate.
1 cup chopped pecans (optional)

Directions:
Preheat oven to 375. Stir flour with baking soda and salt; set aside. Beat butter with sugar and brown sugar at medium speed until creamy. Add vanilla and eggs, one at a time, mixing on low speed until incorporated.
Gradually blend dry mixture into creamed mixture. Stir in chocolate chips and nuts (if desired). Drop by tablespoons onto cookie sheets lined with parchment paper. Bake for 9 to 11 minutes or until golden brown.

You can bake in small batches by dropping by tablespoons full onto parchment covered pan or plate, then place in freezer until completely frozen. Store in ziplock bags or plastic containers until ready to bake. It's best to thaw a little when ready to bake or it may take a little longer if frozen hard.
