5 medium sweet potatoes, peeled, cooked, and mashed
1/4 C. firmly packed light brown sugar
5 oz. evaporated skim milk
2 eggs
1/2 tsp. cinnamon
1/4 tsp. ground allspice
1/8 tsp. ground nutmeg
1 (3.4 oz) instant butterscotch pudding
1 C. chopped pecans

Directions:
Directions:
1. In a large bowl, mix together all ingredients except pecans. Stir well.
2. Place sweet potato mixture in a 13" x 9" glass casserole dish.
3. Sprinkle pecans over sweet potato mixture.
4. Bake at 350º F for 30 minutes, or until mixture reaches an internal temperature of 165º F in the center of the casserole dish.
5. Serve in 1/2 C scoop portions.
