3 qt. Milk
3 c. Sugar
¾ qt. Whipping cream
1 can Canned milk
6 tsp. Vanilla
4 or 5 drops lemon extract
6 Tablets of Junket (or Rennet)
¼ c. Warm water
½ tsp. Salt

Directions:
Directions:
Heat 2 ½ c. of the milk in a saucepan with the sugar and let scald. Set aside to cool.

Once cooled, add the remaining 3 qts. of milk, whipping cream, canned milk, vanilla, lemon extract and salt.

Dissolve 6 tablets of Junket into the ¼ c. of warm water and add to milk mixture.

Place in large ice cream maker and crank with ice and salt layered on the outside.
