3 egg whites
1/4 tsp cream of tartar
6 tbsp sugar (granulated or powdered)
1/2 tsp vanilla

Directions:
Directions:
1. In large mixing bowl, beat egg whites and cream of tartar until very light and fluffy.
2. Add sugar a spoon at a time, beating all the while (do not stop)
3. Add vanilla and beat until texture is very smooth, not grainy, and will stand in peaks.
4. Spread on top of filling. Be sure to seal to the edge, completely covering filling.
5. Bake in 350º oven until lightly brown, about 10-12 minutes.
