4 strips bacon, cut up
2 eggs
¼ cup water
¼ cup vinegar
½ cup sugar
Salt and pepper

Directions:
Directions:
Fry bacon bits in a heavy saucepan, then pour off the grease. Beat the eggs slightly in a bowl and stir in the other ingredients. Add this mix to the bacon-bit pot, and cook very slowly over medium heat until it thickens, stirring constantly. (Warning: This will curdle if cooked over too high a flame or without constant stirring.) It doesn’t take long; four or five minutes at the most.
Serve over greens, sliced cucumbers and onion, or hot potato salad.
