3 eggs
1 cup oil
1 ½ cups sugar
2 cups grated zucchini
2 teaspoons vanilla
2 cups flour
¼ teaspoons baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon salt
Optional: 1 cup raisins
Optional: 1 cup nuts

Directions:

Beat eggs slightly. Stir in oil, sugar, zucchini and vanilla. Add remaining ingredients and stir until blended.
Pour the batter evenly into 2 well-greased and floured pans. Bake at 350 or 375º for 1 hour or until center springs back. Cool in pans or wire rack for 10 minutes.
