10-14 ounces (2 packages) of Extra Sharp White Cheddar Cheese (cut into small cubes)
Pasta (original recipes called for elbow, but we like an interesting Italian)
Milk
Butter

Directions:
Directions:
Cook pasta according to directions on package, strain & rinse with cold water. Butter well a deep casserole dish. You will be making several layers of pasta & cheese. Starting with the pasta put approx 1/3 of the pasta in the casserole dish. Next layer the cubed cheddar cheese to cover, then repeat the layers. Top the dish with generous dots of butter. Pour milk in slowly, key being when the dish is tipped to its side the milk should barely reach the rim of the dish. Then you will know you have included enough milk. Top with fresh ground black pepper.

Bake @375 for 60 mins, till crusty & bubbly.
