6 cups quick oats
2 1/2 tsp baking soda
3/4 lb butter, softened
1 cup sugar
1 1/2 cups brown sugar
1 tsp vanilla
5 eggs, beaten
4 cups peanut butter
1 (12 oz) package chocolate chips

Directions:
Directions:
Preheat oven to 375º F
In medium sized bowl combine oats and baking soda, set aside.

In large bowl stir together butter, sugars, vanilla, eggs, peanut butter, and chocolate chips. Mix the oat and soda mixture to the wet ingredients and blend well. You will have to do this by hand as it takes a bit to mix well.

If desired add a cup chopped walnuts, M & M's, raisins, or Grapenuts cereal (adds an interesting crunch)

Drop spoonfuls of batter on cookie sheets and bake for about 14 minutes.

This recipe is gluten free!

Rick Watson would bring these cookies for his lunch almost every day when he was repairing the stucco on my house. I think he made up the recipe. It’s almost a healthy cookie! I love them straight out of the freezer, too.

The recipe makes a HUGE BOWL of cookie dough so you can get 7-10 dozen cookies, depending on how large you want the cookies.
