Sweet Potato Casserole Recipe

Sweet Potato Layer

5 lbs sweet potatoes
4 Tbsp butter
2 eggs, lightly beaten
1 tsp salt
3½ tsp ground cinnamon
1½ tsp ground nutmeg
1½ tsp vanilla
½ c brown sugar
¼ c heavy cream (or milk)

Cookie Crust Layer

½ c all-purpose flour
1 c brown sugar
1 c quick cooking oats
2 tsp ground cinnamon
½ c (1 stick) butter, softened
1 - 2 c miniature marshmallow

Preheat oven to 350º F

Wrap sweet potatoes in foil and place on baking sheet
Cook ~1 hour
Test the potatoes by piercing with a fork. If potatoes are soft and the fork removes easily, the are done. If not, cook a little longer and check again until done

Allow sweet potatoes to cool before removing foil and skin
Mash potatoes with butter
Add eggs, salt, cinnamon, nutmeg and vanilla and beat until combined
Add brown sugar and cream and mix well

In a separate bowl combine the dry ingredients for the crust layer
Stir in butter with a fork until it becomes a crumbly mixture

Lightly coat a 9×13 baking dish with nonstick cooking spray
Spread the sweet potato mixture into the prepared baking dish
Crumble oatmeal crust on top of marshmallows
Top with marshmallows
Bake for 30 - 45 minutes,or until hot and bubbly with golden marshmallows
