Filling- 3 cups sliced fresh or frozen Rhubarb cut into 1 inch pieces
1 quart fresh strawberries mashed
1 cup sugar
2 Tablespoons lemon juice
1/3 cup cornstarch

Cake- 3 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter cut into pieces
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract

Topping- 1/4 cup butter
3/4 cup flour
3/4 cup sugar

In large kettle combine rhubarb, strawberries, and lemon juice cover kettle and cook over medium heat for about 6 minutes. Combine sugar and cornstarch together and put into saucepan. bring everything to a boil stirring constantly until thickened. Remove form heat and set aside. In large bowl combine flour, sugar, baking powder, baking soda, salt. Cut in butter until mixture resembles a course crumble. Beat buttermilk , eggs and vanilla, stir into crumb mixture Spread half batter into a spayed 9x13 pan. carefully spread filling on top. Then drop remaining batter by tablespoons over filling. Roughly 2 inches or so apart. For the topping melt butter over low heat. remove from heat. stir in flour and sugar until resembles course crumbs. Sprinkle over batter Bake at 350 for 40-45 minutes. cut into squares and enjoy.

I believe Grandma VanRoosenbeek got this recipe from a old neighbor/friend of ours when I was a little girl named Mrs. Boucher (BOOSHAE) . She was such a nice lady and always gave my mom recipes to enjoy.
