Grandma's Turkey Soup Recipe

Left over turkey carcass
Barley
Carrots
Celery
Parsley flakes

Directions:
Directions:
Night before you make the soup, put the barley in a strainer and soak in hot water
Also, boil the turkey carcass for approximately one hour and then let it cool overnight
Remove carcass from pot and take off all the remaining turkey and put back in the pot
Dice carrots and celery and add to pot
Add barley and parsley
Add more water as needed
Bring to a boil and then lower the heat so that the soup remains bubbling for approximately 1-1½ hours. Allowing the carrots and celery to soften.

This is a big favourite of Cathy's with bread. Growing up, it was also a big favourite of Megan's. It got named Grandma's soup by her.
