Grandma Ada's Flan Recipe

1 can evaporated milk
1 can sweetened condensed milk
4 eggs (with all white/stringy parts completely removed)
1 tsp of vanilla
1 cup of sugar (for the caramel)

Have the glass cooking bowl ready.
Make caramel by putting the one cup of sugar in a saucepan(I use a non-stick one), heat to med/high, and stir consistently until the sugar melts and starts to turn a light-medium brown. Watch this carefully. Once it melts and starts to darken, it will go very quickly and will burn if you don't watch it. Pour the caramel into the flan bowl and swirl it so that it goes up about 1/3-1/2 the sides. This isn't exact and the caramel will start to harden a bit. That's exactly what should happen. Set the bowl aside.
Combine all the other ingredients and mix well. (a hand mixer or stand mixer)
pour over the caramel. (you'll hear a crackling sound..that's fine!)
Place the bowl with uncooked flan into a large pan filled with water so that the water rises about 1-2 inch depth. Carefully place in oven at 350º and bake for about an hour. Check and see if it's set by gently shaking the flan. It may need another 10 min. You'll know it's done when it shakes a little but doesn't look very liquidy.
Carefully take it out of the oven and remover the flan pan from the water bath. Cool for 15-20 min and then use a butter knife to gently loosen the flan from the outside of the bowl. You'll know it's loosened when you can swirl the flan around in the bowl and it moves freely. Cover with plastic wrap and refrigerate the flan (in the bowl!) until serving. To serve, flip over on serving plate and scrap any additional caramel over the top.

This has some specific steps that are all notated in the recipe. It seems hard, but it's really not! Don't be afraid to try it. (you may not love flan, but everyone else does..and you'll be a rock star if you make it for them) <3
