9 eggs
1 ¼ cups sugar
1 Lemon
1 Orange
¾ cup potato starch
1 tablespoon cake meal
Pinch of salt

Preheat oven to 325º
Sift together Cake meal, potato starch and pinch of salt.
Lemon and orange- grated rind and then juice in separate bowl.
Using two bowls:
Separate Egg yolks from the egg whites. (7 eggs)
Add two whole eggs to the bowl of yolks.
Beat the seven egg whites until stiff but not dry. Set aside.
Beat the egg yolks plus two whole eggs until very thick and continue beating while gradually adding sugar. Beat until sugar is throughly dissolved. 10-13 minutes.
Add grated lemon and orange rinds, then add the lemon and orange juice.
Continue beating until thick and light in color .
Slowly add the sifted potato starch and cake meal and pinch of salt.
Fold in (do not mix) beaten egg whites to egg yolk mixture.
Put wax paper for the bottom of pan (push through on top of spindle) and then cut piece to go around spindle. Pour mixture going the direction of wax paper into ungreased 10 inch tube pan with legs or a spring form pan could be used. Bake for 1 hour and 10 minutes in oven. When done, remove from oven and invert pan on a bottle to hang until throughly cooled. Peel wax paper away after cooled. Loosen the cake from the pan with a spatula. Enjoy and happy baking.
