1 box All Bran cereal (not flakes) approx. 6 cups
3-1/4 cup hot water
3-3/4 cup All Purpose Flour
1 cup Coconut Flour
1/2 cup Almond Flour
1-1/2 cup Stevia Brown Sugar
2 cups Splenda
5 tsp. baking soda
1-1/2 tsp. salt
1-1/2 tsp. cinnamon
1/4 tsp. nutmeg
5 eggs, beaten
1 qt. (4 cups) buttermilk
1 cup coconut oil, heat to liquid
2 Tbsp. vanilla
4-5 cups chopped walnuts
Raisins, if desired

1. Pour hot water over All Bran in a very large bowl.
2. Mix dry ingredients in a separate bowl.
3. Beat eggs and other liquid ingredients in a separate bowl. Add dry to liquid ingredients.
4. Add All Bran and mix well.
5. Add walnuts and raisins.
6. Spoon into muffin liner cups sprayed with Pam. Fill to the top. Doesn't rise much.
7. Bake at 375º for 20 minutes
