5 lbs sweet potatoes
1 cup sugar
1 large can of sliced pineapple (in it's own juice)
1 stick of butter
6 eggs (separated)
1 tsp vanilla
1 bag marshmallows

Directions:
Directions:
Bake at 350º
Boil the sweet potatoes (without peeling them!) until soft. Drain/cool and take off skin. Mash them with 1 cup sugar, 1/2 can of the pineapple juice, softened butter, 6 egg YOLKS, and 1tsp vanilla. Mix well

In a separate bowl, beat 6 egg whites until stiff, add gently to the sweet potato mixture. Spray a 13 by 9 pan with non stick spray. Pour in all the mixture and spread evenly. Add pineapple slices on top and back at 350º for 45 min. After that, place marshmallows on top and return to the oven for just a few minutes to bake until the marshmallows are golden and melty.

Make sure you separate the eggs and add only the yolks to the first part. Then make a meringue with the whites to gently fold into the full sweet potato mixture.
