2 egg whites
1/2 tsp. vanilla
2/3 cup sugar
1 1/3 cup sweetened flaked coconut

Directions:

1. Grease a cookie sheet.

2. Beat egg whites and vanilla on high speed until soft peaks form. Gradually add sugar about 1 tbsp. at a time beating until stiff peaks form. Fold in coconut.

3. Drop mixture by rounded teaspoons 2 inches apart onto the greased cookie sheet.

4. Bake in 325º oven 18-20 minutes or until edges are lightly browned. Transfer to a wire rack and let cool.

This recipe has been a blessing for a family member with food allergies who can't enjoy most desserts.
