1 qt. buttermilk
1/4 kosher salt
2 T. dried thyme
2 T. dried oregano
1 T. hot pepper sauce
2 cloves garlic; smashed
16 pieces of chicken
4 C. flour
1 T. sweet paprika
1 T. black pepper
solid vegetable shortening

Whisk buttermilk w/ salt, thyme, oregano, hot pepper sauce & garlic in a large nonreactive bowl. Add chicken- coat-cover-refrigerate overnight. Shake flour, paprika, pepper in plastic or paper bag. Drain chicken on rack & add to flour & coat. Place on a rack. Fill 2 large heavy skillets w/ 3/4" oil, medium heat 340º. Add chicken skin side down w. white meat in one skillet dark in other. The oil will drop to 250º. Adjust heat to keep at 350º- the oil should be bubbling gently around the chicken. Fry to a deep golden brown. 10 min. Turn 10 min another side, Put on clean rack & serve immediately or at room temp.
