8-12 oz sausage kielbasa or andouille sliced
1 onion sliced
1 red bell pepper sliced
2 T oil like avocado
2 t Cajun seasoning divided
2 T tomato paste
24 oz cauli rice frozen
1 lb wild caught shrimp peeled and deveined
2 T melted butter
Salt and pepper
Fresh parsley to garnish

Oven 425º
Lg bowl toss sausage, onion, pepper, 1 t seasoning, and oil. Add to sheet pan and cook 10 min
Remove from oven and put back in bowl. Add tomato paste and mix. Add cauli rice and 1 t seasoning. Back to sheet pan and bake 20 min, stir half way. Add the shrimp to top and drizzle with melted butter. Bake 7-10 min until shrimp cooked. Garnish with parsley.
