2 t salt
2 t paprika
1 t black pepper
1- 5 lb whole duck
1/2 c melted butter

Directions:
Directions:
Preheat oven to 375º. Rub salt, pepper and paprika into the skin of the duck and place in a roasting pan. Roast duck for 1 hour, then spoon 1/4 c melted butter over bird. Cook 45 minutes longer then spoon remaining butter over duck and cook 15 minutes longer, or until golden brown.

You may add garlic or lemon, savory and fresh thyme to the cavity. But if you plan to make waffles with the grease as Ya Ya did than keep it simple.

Some people suggest poking the skin to release fat during cooking time, if you wish.
