Ingredients: 1 box lasagne noodles 6-7 cups of your favorite pasta sauce, homemade (or 2 25-oz jars) I lb ricotta 2 eggs 1 lb mozzarella, grated 1 6 to 8 oz wedge Romano cheese, finely grated ¼ cup Italian parsley, chopped

Directions:In medium bowl, mix ricotta, eggs and parsley. In a rectangular baking pan, spread a few spoonfuls of sauce. Add a layer of uncooked noodles, allowing a little room for expansion. (Though Grandma precooked them, you don’t need to if you use plenty of sauce.) With a spoon, spread a layer of ricotta mixture onto the noodles, then a layer of sauce, then mozzarella and Romano. Continue layering in same manner. Bake at 350º for about 40 minutes.
Serve with lots of garlic bread and something green such as salad or green beans, for contrast. |

Notes: Note on spelling: according to my research, lasagna is singular (one sheet of the pasta) and in America, at least, also refers to the dish itself. Other English speakers usually spell the dish lasagne. Lasagne is plural, as in many noodles. Both are pronounced the same. And in Italy the dish called lasagne is very different, made with bechamel sauce and thin noodles but no ricotta, and is called “pasticcio di lasagne” or “pasticcio” for short. But you’re not wrong if you write “lasagne” here!
