2 cups corn cut off cob
1 1/4 cups All-Purpose Flour
1 teasp. Baking powder
1 teasp. salt
2 eggs
Vegetable oil for fryng

Directions:
Directions:
Add dry ingredients to corn and mix well.
Add 2 egg yolks (save the egg white) to mix and stir in.
Beat egg whites till stiff when done add to mixture and stir to make a moist mixture.
Use a large stockpot for frying. ( corn will pop and spray oil) Heat about 4 cups of oil in the pot. I use a cookie scoop for the batter. drop into the oil on medium-high heat. Use a slotted spoon to get fritters out of the pot and onto paper towels. serve with butter and maple syrup,

please be careful when making these don't stand too close because of the corn pops and spray's oil.
