Chicken Asparagus Wraps Recipe

4 skinless boneless chicken breast halves, 1 lb.
20 fresh asparagus spears, trimmed, 1 lb.
4 1/2 tsp. olive oil
2 tsp. lemon juice
1/2 tsp. basil
1/4 tsp. thyme
1/4 tsp. pepper
1/8 tsp. salt
1/4 c. chopped green onions
2 tsp. cornstarch
1 c. chicken broth
diced garlic clove
small can sliced mushrooms, drained

Directions:

Flatten chicken breasts slightly. Wrap each around five asparagus spears and secure with toothpicks. The tips should come out on one end and the ends of the stalks on the other. Place in a 13x 9 baking dish coated with nonstick baking spray. Combine oil, lemon juice, garlic, salt, pepper, basil, and thyme and pour over the bundles. Cover the tips with foil.
Cover and bake at 350 degrees for 15 minutes. Uncover and sprinkle with onions and mushrooms. Bake 12-15 minutes longer until the juices run clear and the asparagus is crisp-tender. Remove bundles to a serving platter and keep warm. In a saucepan, combine cornstarch and broth until smooth; stir in pan juices. Bring to a boil and cook and stir for two minutes until thickened. Remove toothpicks from bundles and top with sauce.
