1 can pumpkin puree (15 oz.)
2 eggs
2 c. brown sugar
1 c. cooking oil
2 tbls. molasses
1 tsp. salt
1 tsp. ground cloves
1 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. baking powder
3 c. flour

FILLING:
1 tbls. gelatin
2 tbls. water
½ c. unsalted butter
½ c. cream cheese
2¼ c. confectionary sugar
2 tbls. finely chopped crystallized ginger

Heat oven to 350ºI
Grease a cookie sheet.

In a large mixer bowl, cream together the pumpkin puree, eggs, brown sugar, oil and molasses.
In another bowl combine the flour, baking powder, baking soda, salt and spices.
Add dry ingredients into the creamed mixture.
Beat until throughly mixed.
Add 1/4 to 1/2 cup of extra flour for fluffier cakes.
Drop by large scoop onto prepared cookie sheet.
Bake for 10-12 minutes.
Cool

FILLING:
Mix the gelatin and water together and set aide.
Heat gelatin mixture in microwave for 30 seconds.
Cream the butter and cream cheese together.
Add the gelatin and mix.
Add the chopped crystalized ginger and beat..
Add the confectionary sugar and thoroughly mix until smooth and creamy.
