Ingredients: ½ c. shortening ½ c. butter or margarine, softened ½ c. creamy peanut butter 1 ½ c. sugar, divided 1 c. packed brown sugar 2 eggs 3 c. flour ¾ tsp. baking soda ½ tsp. salt FILLING: ½ c. creamy peanut butter 4 oz. cream cheese, softened ¼ c. sugar 1 egg yolk ½ tsp. vanilla 2 ½ c. chocolate chips TOPPING: 1 tbsp. butter or margarine 1 ½ c. confectionary sugar 6 tbls. cocoa powder 3 tbls. water ¼ tsp. vanilla

Directions:Heat oven to 350º Lightly grease a cookie sheet
In a large mixing bowl, cream shortening, butter, peanut butter, 1 cup sugar and brown sugar. Beat in eggs, one at a time. Combine flour, baking soda, and salt. Gradually add to creamed mixture. Roll into 1½ inch balls; Roll in remaining sugar. Place 2" apart on prepared cookie sheet. Make an indentation in the center of each ball. FILLING: In a small mixing bowl, beat peanut butter and cream cheese until smooth. Beat in sugar, egg yolk and vanilla. Spoon ¾ tsp. of filling into each indentation. Bake for 12-15 minutes. Cool TOPPING: Melt chocolate chips; Stir until smooth. Dip bottoms of cookies in chocolate, place cookie upside down on waxed paper. Refigerate until set. Melt butter and whisk in confectionary sugar and cocoa. Gradually add water, whisking until smooth. Stir in vanilla. Drizzle over tops of cookies. Chill until chocolate is set. Refrigerate in an airtight container. |
