4 c. flour
2 c. oatmeal
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 ½ c. cooking oil
2 c. brown sugar or maple sugar
1 c. sugar or maple syrup
1 egg
1 tsp. vanilla
1 can pumpkin puree (16 oz,)
4 c, chocolate chips

Directions:

Heat oven to 350º
Lightly grease a cookie sheet.

In a large mixer bowl, mix together the flour, oatmeal, baking powder, cinnamon and salt.
Cream together in a medium bowl the cooking oil, sugars, egg and vanilla.
Add the pumpkin.
Combine the wet ingredients with the dry ingredients.
Thoroughly mix. NOTE: if the mixture is too runny, add some more flour to make a dough the keeps it's shape on the pan.
Stir in the chocolate chips.
Spoon onto prepared cookie sheet.
Bake for 12-13 minutes.
