½ cup browned butter chilled then brought to room temperature
½ cup butter room temperature
1 cup brown sugar
½ cup sugar
2 large eggs
1 Tbs. vanilla
¼ cup half and half
1 orange peel zest (about 1-2 TBS)
Juice from one orange (about 4 TBS)


1 cup flour
1 cup ground oat flour
1 tsp. baking soda
1 tsp. sea salt flakes or equivalent
1 Tbs. cinnamon
1 tsp. cloves
½ tsp. nutmeg

3 cups oats
1 cup fresh cranberries

Pre-heat oven to 350º F

Place one stick of butter in small pan on low heat to brown. Keep an eye on the butter as it starts to brown it will scorch quickly. As soon as it starts to brown, remove from heat. Allow to cool in refrigerator. While browning butter, zest the peel of one orange and set aside. Soak craisins in orange juice.

As butter returns to a workable room temperature, mix all dry ingredients except oats and orange zest together.

Cream together butter and sugar in a large mixing bowl. Add eggs and vanilla. Mix thoroughly. Add half an half. Mixture should look light and fluffy. Mix in vinegar.

Using a wooden spoon slowly add flour mixture to creamed butter mixture. Once combined, add oats, drained craisins and orange zest.

Using melon ball disher of preferred size and drop onto a lined cookie sheet. Chill for 20 minutes prior to baking. See note for easy method. Bake for 7 - 12 minutes depending on size. Transfer sheet to cooling rack prior to removing.

Scoop dough into gallon freezer bag. Flatten dough to about an inch thick. Chill for 30 minutes. Score into 1-1.5" squares then freeze solid. Break apart as needed for fresh baked cookies anytime. Bake as directed for 7 - 12 minutes at 350F.
