2 eggs
1 cup milk
1 pound large shrimp, uncooked and deveined
36 saltine crackers, crushed fine
vegetable oil for frying

Directions:

Beat the eggs and add the milk. Dip shrimp in the egg and milk mixture, then in the saltines. Fry in deep hot oil until golden brown.

I usually plan 1/4 lb. of shrimp per person. Make sure you fry at a Med-High temp. The shrimp don't take very long to cook at all or they will become tough.
