2 cups water
1 stick cinnamon
1 cup rice
1 quart milk (whole or PET milk)
3/4 cup sugar
1/4 teaspoon salt
4 egg yolks
1/2 teaspoon vanilla
1/4 cup raisins
1 teaspoon unsalted butter
2 inches lemon zest

Directions:
Directions:
In 2 cups water, boil cinnamon stick and lemon zest for 5 minutes.

Add rice and stir for 5 minutes. Leave covered and bring heat down until water evaporates and rice has puffed and is soft.

Add milk, sugar, and salt and turn flame to medium. Stir frequently until rice is cooked (20-25 minutes).

Take off heat and add beaten egg yolks and vanilla and butter. Add sugar a little at a time - stirring. Add raisins and sprinkle with cinnamon.

Put in oven 3-4 minutes.
