15 oz ricotta cheese
1 egg
4 oz can of chopped green chiles
1 bunch green onions, chopped
2 cups grated jack cheese
1 tsp. cumin
8 flour tortilla
1 can enchilada sauce
2 cups grated cheddar cheese
Sour cream (optional)

Directions:
Directions:
Combine first 6 ingridients. Spread mixture on tortilla and roll into enchilada shape. Place enchiladas side by side in glass 9 x 13 inch dish. Pour enchilada sauce over enchiladas. Cover with wax paper. Put in microwave for 11 min. on high. Remove wax paper and cover with cheddar cheese. Microwave another 2 min. Garnish top with sour cream.
