2 cubes of butter
1 cup brown sugar
1 cup of white sugar
1/2 tsp. salt
1 rounding tsp, of Baking soda
1 cup pineapple juice
1 cup of crushed pineapple
1 cup of grated carrots
1 cup of raisins
1 cup of coconut
1 cup of walnuts
4 eggs
3 cups of flour- little more if needed
2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp nutmeg
1/2 tsp. allspice
1 tsp. cloves

Directions:
Directions:
Cream together butter, sugars, salt and soda. Add Pineapple juice, crushed pineapple, carrots, raisins, coconut, and walnuts. Fold in Flour and spices. Pour into loaf pans, Bundt pan or oblong pan. Bake 1 hour at 350 degrees or until inserted tester comes out clean
