1- 1 1/2 c. Tortilla chips crushed into pieces (aka) the crumbs at the bottom of the bag,
1 lb. ground beef
1 packet taco seasoning
1 can black beans, rinsed
1 c. Spanish Gardens Taco Sauce (or 1 cup salsa)
1 egg
2 c. Monterey Jack cheese, shredded

-Toppings-
8 oz. sour cream
2-3 c. romain lettuce, rinsed and chopped
1/2 c. diced tomatoes (cherry or roma)
1/4 c. sliced black olives
2 green scallions, chopped

1. Preheat oven to 350º and spray a 9x9 square casserole dish
2. Brown meat in a skillet
3. While meat is browning, dump crushed chips into casserole dish, this will be the "pie crust"
3. Once meat is browned, add black beans and taco seasoning packet (add water based on amount on back of packet).
4. Pour meat / bean mixture on top of crushed chips in the casserole dish
5. In a bowl mix the egg and Spanish Gardens until blended, then drizzle evenly over the meat
6. Top with the shredded cheese
7. Bake for 30 minutes
8. While casserole is baking, chop and dice the toppings
9. After 30 minutes, take casserole out of oven, spread the sour cream over the top (like your frosting a cake).
10. Sprinkle the lettuce, followed by tomatoes, black olives and the scallions

Dig in!

This is a Metsker family favorite, one that Grandma Susan makes for her grandkids today. My mom Susan taught me this recipe when I in grade school. I remember her showing me how to hold a knife and slice olives.

This meal can easily be doubled using a 9x13 casserole dish or adapted to fit dietary needs. For example, use Gluten Free chips & seasoning, omit or swap out ingredients (fat free plain greek yogurt instead of sour cream, or use ground turkey or chicken), etc.

Time Saving Tips
- Brown meat, add beans and taco seasoning and store in fridge or freezer until you're ready to assemble dish.
- Buy chopped romaine, shredded cheese and already sliced olives
