1lb shred veggies (your choice of cabbage, carrots, bell pepper, snow peas, Brussels sprouts, etc.) roughly 6-7 C
3 scallions sliced
1 C cilantro or Italian parsley or mint chopped

Dressing
3 T olive oil
1 T toasted sesame oil
1/4 C rice wine vinegar
3 T honey or other liquid sweetener
1 T Soy sauce
1 finely minced garlic clove
1 T finely chopped ginger
1/2 tsp salt
1/2 tsp chili flakes (optional)

Optional Toppings
Toasted seasame seeds
Crushed roasted peanuts or cashews

Directions:
Toss shredded veggies in a large bowl. Add cilantro and scallions. Whisk dressing ingredients in a small bowl. Pour dressing onto slaw and toss well. Garnish with optional toppings.
