1 cup veggie oil
3 eggs slightly beaten
2 cups sugar
2 cups grated zucchini
2 tsp vanilla extract
3 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp ground cinnamon
1 cup chopped walnuts or pecans

Directions:
Directions:
Combine oil, eggs, sugar, zucchini and vanilla in a large bowl and blend well. Stir in flour, baking soda, baking powder, salt and cinnamon. Do not beat. Stir in nuts. Spoon batter into 2 well greased loaf pans (8" x 4" x 2.5"). Bake at 350 degrees for 1 1/2 hours or until done
